Today we will be celebrating the Moon Goddess in all her glory and splendor. The Full Moon is tomorrow and with it offerings of delicious mooncakes!
Often the day of mooncakes is on April 8th, however it can be done on or near the Full Moon, so that the offerings are fresh.
I love to make crescent shaped cookies. They are filled with flavor! Almonds, spice, and sugary delight. Packed with magical intentions.
Crescent Moon Cookies
Makes about 3 dozen
You will need:
- 2 1/2 cups all purpose flour
- 1 tsp salt
- 3/4 tsp cardamom, ground
- 3/4 tsp cinnamon, ground
- 2 sticks unsalted butter, at room temperature
- 1 cup + 2 cups of confectioners sugar
- 1 tsp vanilla extract
- 2 cups almonds, very finely chopped
Preheat oven to 350F
Whisk together the first 4 ingredients.
Beat butter and sugar until light and fluffy.
Add vanilla extract and stir to combine.
Add the flour mixture and mix, just until combined.
Add almonds and still until thoroughly incorporated.
Using 1 tablespoon of dough per cookie, shake into crescents and place on being sheets, 2 inches apart.
Bake, in batches, until lightly golden. This will take about 15 minutes.
Let cool for 5-10 minutes.
Place the remaining 2 cups of confectioners sugar in a wide, shallow bowl.
When the crescents are cool enough to handle but still warm, roll in confectioners sugar, then transfer to a wire rack to cool completely.
Once cool, roll in confectioners sugar again.
